what's everyone cooking

 

That's a good question. Normally we try and tie in the cities involved for the menu. Obviously in this case you'd have to go all New Orleans, because Indy offers nothing. I need to get on that menu.

 

Get some carry out from Applebee's or Chili's or something. Chain city USA!!!!

Yeah...I got nothing. The restaurants here suck pretty bad for the most part.

I haven't decided if I'll be hosting a party or not. I'm probably going to one that I think is being catered.

 

For those looking for a Louisiana themed cusine for the party, here ya go!

 

Early in the day, you can prep the appetizer of boiled shrimp.

 

 

Make this delightful party appetizer early in the day so the shrimp can blend with the flavors in the sauce.

 

 

Makes 24 servings.

 

 

Ingredients

3 quarts water

1 package (3 ounces) ZATARAIN'S® Crawfish, Shrimp and Crab Boil - In a Bag

2 tablespoons salt

1 lemon, quartered

4 pounds large shrimp, peeled and deveined

1 medium onion, sliced thin

1 jar (5.25 ounces) Horseradish

1 jar (5.25 ounces) Creole Mustard

1/2 cup ketchup

1/4 cup lemon juice or cider vinegar

1 tablespoon Worcestershire sauce

1 teaspoon hot pepper sauce (or to taste)

1/2 cup vegetable oil

 

 

Directions

1. Bring water, Crab Boil bag, salt and lemon wedges to boil in covered in 5-quart Dutch oven or saucepot on high heat. Add shrimp; stir. Cover. Cook 3 minutes or just until shrimp turn pink. Drain and rinse with cold water. Drain well.

 

2. Meanwhile, mix remaining ingredients, except oil, in large bowl. Add oil in steady stream, whisking until well blended. Add shrimp; toss to coat well. Cover.

 

3. Refrigerate at least 1 hour or up to 6 hours. Serve shrimp with crackers or crusty bread.

 

 

For a caserole style dish, use blend of the bayou. It's easy to prepare.

 

Ingredients

1 (8 ounce) package cream cheese, cubed

4 tablespoons butter or margarine, divided

1 large onion, chopped

2 celery ribs, chopped

1 large green pepper, chopped

1 pound cooked medium shrimp, peeled and deveined

2 (6 ounce) cans crabmeat - drained, flaked and cartilage removed

1 (10.75 ounce) can condensed cream of mushroom soup, undiluted

1 (4.5 ounce) jar sliced mushrooms, drained

1 teaspoon garlic salt

3/4 teaspoon hot pepper sauce

1/2 teaspoon cayenne pepper

3/4 cup cooked rice

3/4 cup shredded Cheddar cheese

1/2 cup crushed butter-flavored crackers

 

Directions

In a small saucepan, cook and stir the cream cheese and 2 tablespoons butter over low heat until melted and smooth. In a large skillet, saute the onion, celery and green pepper in remaining butter until tender. Stir in the shrimp, crab, soup, mushrooms, garlic salt, hot pepper sauce, cayenne and rice.

Transfer to a greased 2-qt. baking dish. Combine cheese and cracker crumbs; sprinkle over the top. Bake, uncovered, at 350 degrees F for 25-30 minutes or until bubbly.

 

 

 

For sweets, you can have your choice of pecan pralines

 

 

Ingredients:

2 cups brown sugar, firmly packed

1/4 cup water

1/4 cup evaporated milk

2 cups pecan pieces and halves

2 teaspoons vanilla

3 tablespoons chilled butter, cut in pieces

Preparation:

Combine sugar, milk, and water in a 2-quart saucepan; heat to boiling stirring constantly. Cook until mixture reaches soft ball consistency (235°).Remove from heat; stir in pecans, vanilla, and butter. Immediately drop by tablespoons onto wax paper.

 

 

bread pudding with rum sauce

 

 

Ingredients:

*** Pudding***

1/3 cup butter or margarine, melted

16 cups French bread cubes, day old, lightly packed

1 1/2 cup sugar

2 tablespoons vanilla

1 teaspoon nutmeg

1 1/2 teaspoon cinnamon

3 cups milk

3/4 cup golden raisins

1 cup chopped, toasted, pecans

*** Rum Sauce***

1 cup butter or margarine

1 1/2 cup sugar

2 eggs, beaten until frothy

1/3 cup dark rum

*** Soft Cream***

2 cups whipping cream

1/3 cup icing sugar

1 tablespoon vanilla

2 tablespoons brandy

2 tablespoons Frangelico liqueur (hazelnut-flavoured liqueur)

1/4 cup sour cream

 

Directions:

 

To Make Pudding Pour a small amount of the melted butter in a 9x13 pan and swirl around to cover bottom and sides. Place bread cubes in pan. In large bowl, beat eggs and sugar until thickened (3 - 3 1/2 minutes). Add vanilla, nutmeg, cinnamon and milk plus reserved butter. Beat at low speed to combine. Stir in raisins and pecans. pour over bread. Stir to evenly distribute rains and nuts. Allow bread to absorb all liquid (30-45 minutes). Press bread down often to cover all cubes. Preheat oven to 350F. Bake until crusty and golden brown (45-60 minutes). Cool to lukewarm and slice into squares.

 

To Make Rum Sauce Cream butter and sugar until light and fluffy. Put in top of a double boiler over simmering water. Cook 20 minutes, whisking often. In a bowl, whisk 2 Tbsp butter-sugar mixture into beaten eggs, then whisk in 2 Tbsp more. Now, whisk egg mixture into butter-sugar mixture, cook over simmering water 4-5 minutes, whisking constantly. Cool slightly. Whisk in rum.

 

To Make Soft Cream Chill beaters and a medium-sized bowl until very cold. Beat ingredients on medium-high until soft peaks form (3-4 minutes). Do not overbeat. Cover tightly and refrigerate until served.

 

To Serve On individual plates, place a spoonful of warm rum sauce, a square of pudding and a large dollop of soft cream.

 

 

or a king cake. (I don't have a recipe for king cake because it's easy to get at the bakeries here.)

 

If you do gumbo, the key to a good one is the roux. It also takes time to make a good gumbo, so make sure you research some good recipes before trying. My mom has a lot of Louisiana cookbooks, and I'd be happy to research some for you.

 

 

Also, if you make a great roux, using it as the base to a dish of red beans and rice makes that dish more awesome than it already is.

 

Finally, you can top it all off with a make your own poboy. You'll need french bread for buns and then whatever fried seafood people like. We usually do a mix of shrimp, catfish, and oysters. Roastbeef is also good if you have gravy to go with it. For fixings, we'll have shredded lettuce, mayo, spicy mustard, coctail sauce, tartar sauce, pickles, tomatoes, and onions.

 

While we fry the seafood, we might decide to do fries or fried pickles as well.

i really want to do something different than just the usual steaks and wings. Gumbo sounds good, but I've never made it before.

Crawfish is out season. You can't get it anywhere around here. Any place that has crawfish right now has bought it months ago and kept it frozen. This is something I never knew till I got down here. I guess any credible place in New Orleans refuses to sell it except when it is in season.

Contemplating buying tix right now. The ones I'm looking at are all about 1,600 a piece and I'd be buying a pair since I'd be bringing the girl. Dunno if it'd be more fun to be there in person or to be at a great party with all of my friends. The expense isn't really the issue, although 3,000 for tix plus food and hotels, etc., is a TON of money to spend. But then again this is once in a lifetime. My grandfather took my dad and uncle to the very first Saints game and after that up until his death he had season tickets. Some of my earliest memories are of Rickey Jackson and Sam Mills crushing people. So money isn't really the issue.

 

The main issue as I see it is that I've already participated in the "community" aspect of seeing them live at this late stage of the season when I was at the game last weekend and got to run around acting a fool on Bourbon Street and all. It really can't get any better than that. If I went to a party I'd get to be with all of my friends that I've watched games with for years and I'd be able to watch it on a big screen in HD. But seeing it in person would really be something.

 

So I'm definitely up in the air about it for now.

I can see your dilemma. Almost any other city it would be a no brainer to go. However getting to go out and celebrate a Superbowl win (if they win) on Bourbon Street with all the other fanatics may be better.

Couldn't get close enough to Peyton to fight him. Eli is a pretty big guy, so not him. Attacking Archie would be like fighting Ernie Banks (x 2 for me since he was a Rebel and a Saint). Cooper has spinal stenosis, so I could probably beat him up if you'd like.

I'd settle for Harrison but I doubt he shows up as he as shown his true selfish colors and seems no longer involved in the franchise whatsoever.

Really? I'd prefer he goes after Peyton but as a consolation prize I would be happy with Harrison (as in Marvin). Never liked the guy and everything over the last year or so has only made me dislike the guy more. Most recent prominent players who have retired show up for a teams Superbowl. Edge was at the last game and will no doubt be in his backyard of Miami for the Super bowl. I doubt Marvin shows up but if he does I wouldn't mind OMC going after him.

 

Maybe it's because I've had some drinks tonight but I don't see where my first post was confusing or hard to follow.

I thought losing Harrison was going to irrevocably damage the Colts to the point they weren't going to be good this year?
