In Chicago, out standards for pizza are a little bit high. In most of the country, Papa Johns and Domino's is all they have. How sad is that? If a town is big enough for a Papa Johns or a Domino's, they have some kind of mom and pop pizza in town that's better. I'm quite familiar with plenty of podunk central Illinois towns and their pizza availability. This is true. There are two mom and pop pizza places in my little 8,000-population town, plus a place 20 miles south that makes a legitimately pretty good deep dish.
