Are we judging individual plays based on merit or the importance of individual plays in significant games? Mays' catch was outstanding, no doubt, especially given the fact that he made the running grab deep in center field of the Polo Grounds in game 1 of the World Series in a tie game (caught it around 450 feet); but the greatest catch ever? That play has been mythologized, and while I hesitate to call it routine, it's the kind of play that has been made before and since, and it would be made with some not-to-occasional frequency today (relatively speaking) if parks were nearly 475 deep in centerfield. It was a great play and Willie Mays was a great player, but as far as "the catch" is concerned, I am willing to bet he's made many more difficult plays in his career. The fact that his catch was caught on camera during the World Series is what makes it iconic. I've certainly seen better (my opinion obviously) in my time as a baseball fan, and now with the advent of ESPN and Sportscenter, everything is captured for posterity. As far as the list goes, as much as I hesitate to praise a Cardinal player, Ozzie Smith was the greatest defensive player I've ever seen. It is fitting he is number one.
